Onion Free Thanksgiving Turkey
The classic Thanksgiving turkey we all know and love, without onion or garlic! Low FODMAP and still delicious as ever. (Always double check the ingredients on pre-mixed spices before adding.)
Almost all of the ingredients in this recipe are optional. This makes an easy to prepare, yet delicious turkey catered to the personal tastes of you and your guests. As long as you have a turkey, some oil, seasonings, a couple carrots and a couple potatoes. You can make this recipe work! Don’t feel like you need to add EVERY ingredient, just the combinations that speak to YOU.
Ingredients:
1 turkey
Preferred oil: vegetable oil, olive oil, etc.
Preferred vegetables (carrots, potatoes, beets, turnips, sweet potatoes, celery)
Optional: Citrus fruit (lemons, oranges)
Salt
Pepper
Optional: Old Bay or poultry seasoning (up to personal discretion to use pre-made spices. There is always a risk of there being some onion or garlic in these.)
Herbs to taste, fresh or dried (rosemary, thyme, basil, oregano, sage, cilantro, etc.)
Instructions:
Prepare turkey: remove giblets and neck, rinse with water, pat dry.
Coat with oil and seasonings. Use a brush or your hands.
Optional: Half the lemons and/or oranges. Squeeze some of the juice onto the turkey.
Optional (if using a rack): Chop some of the vegetables and fruit in large chunks. Create one small layer on the bottom of the pan.
Place turkey into pan on top of layer of fruits and vegetables (or rack).
Chop the remaining vegetables and fruit. Place inside the turkey. Include fresh herbs such as rosemary.
Cover with a lid or tin foil.
Cook the turkey according to its size.
Remove turkey from oven or roaster once it has reached at least 165° Fahrenheit. Source: USDA.gov
Remove vegetables from inside the turkey and from the pan. Chop into smaller pieces to serve.
Carve turkey and serve. Enjoy your time with family and friends! ♡
Notes:
If your turkey is still frozen, add an hour or two extra to the cook time. It takes up to 50% longer to cook a frozen turkey vs a thawed turkey.
I have made this with only potatoes, carrots, and the turkey seasoned with vegetable oil and poultry seasoning. It was delicious!
