Onion Free Cowboy Caviar

Every year I make this recipe for my birthday. It is fun and delicious. Eat as a dip paired with tortilla chips or as a topping directly on tacos, burritos, or quesadillas.

Ingredients:

  1. Three Roma tomatoes (or one can of diced tomatoes)

  2. One fresh bell pepper

  3. One can of corn, drained and rinsed

  4. One can of black beans, drained and rinsed

  5. One can of black eyed peas, drained and rinsed

  6. 1/2 bunch of fresh cilantro (or dried cilantro to taste)

  7. Salt and pepper to taste

  8. 3 tablespoons oil or Italian dressing

  9. A splash of lime juice

Instructions:

  1. Add all canned ingredients to a bowl.

  2. Dice all the fresh ingredients. Add to bowl.

  3. Add oil or dressing, lime juice, and seasonings. Mix well.
